Breakfast of champions

This my friends is my version of a breakfast for champions!
1 fried egg (friend with 2 tsp of bacon fat)
6 pieces of bacon
2 cups baby spinach
1/2 cup chopped tomatoes (I used cherry tomatoes, cut in halves)
Topped with avocado slices.
Throw the tomatoes & spinach in with the bacon just long enough for the spinach to wilt.

It was seriously delicious!!

This is my life!

My crazy beautiful life is full of these two crazy beautiful gals. They are absolutely my everything. Sure, some days I consider trading them for a cheap bottle of wine & a bag of BBQ flavored corn nuts' but I would never actually do it! (Don't quote me on that, I'm sure come teen years I'll be willing to trade some days for a rock!)  But for now, I'm loving them and remembering to just laugh.... a lot....especially when they do something so outrageously bad. It scares them more than you screaming! :-)

This weekend we are celebrating Mackenzie's 8th birthday at Pump It Up. She is so excited to see everyone. I can't believe my baby is 8!!!! Seems like just last year I was holding her for the first time.
Wow!

Quite a few Updates

So, it's been over a year since I last posted, I've been trying to remember my password for a good 4 months....if not longer! I will be redoing my entire blog (the look) so please, hang in there with me!
Until then, here are a few updates since last May!!

Where I left off was that I had successfully lost 10lbs in one month. Well, I was able to lose 10lbs each month for 4 months straight. By July 2012 I lost 40lbs and then suffered a knee injury that prevented me from doing my normal workout routines. Fortunately I stayed on track with eating healthy, so I continued to lose 10 more pounds over the next few months.
Forward a little bit, to December 2012....Matt & I were officially divorced. (yes, divorced, lets just leave it at that. No need to air ''dirty laundry'')
Brought in the new year with my cousin & all our friends, as always! Turned 26, enjoyed a few holidays, visited South Padre for the first time with an amazing man, sent Mackenzie off to her 2nd grade year at Austin Elementary, successfully potty trained Emily, moved, twice, anddddd I think that may be it. I THINK.

I will be updating my blog as often as possible. So, continue to enjoy. :)

I Did It!!

So, I DID IT!! I reached my goal of losing 10 pounds in a month. My next goal is to, ofcourse, lose another 10 pounds & to complete the June Burpee Challenge that I have joined on FaceBook. I can't wait to see how I do.

Weight Loss

Every Monday I 'weigh in' to see my weeks progress. I think I'll start doing a monthly weigh in rather than weekly, come next month, but for this month I'll continue the weekly weigh ins.
Since April 26 I've lost 7.5lbs. On May 26th will be one month since working out and eating healthy. I am shooting to make it 10 lbs lost. That gives me 4 days to lose 2.5 lbs. I can totally do this! :)


So far this past month, the hardest part for me is to NOT give in to food I know is going to make me gain weight, not to mention, aren't good for me. I am glad my guilt sets in BEFORE consuming said delicious treats, so I don't give in everytime. But I'd really like to get to the point where it doesn't even cross my mind, and I'd like to get to that point quick style! I know I'll get there.

My ultimate goal is much more than 10 lbs, but I'm going to take it 1 month at a time.
