This my friends is my version of a breakfast for champions!
1 fried egg (friend with 2 tsp of bacon fat)
6 pieces of bacon
2 cups baby spinach
1/2 cup chopped tomatoes (I used cherry tomatoes, cut in halves)
Topped with avocado slices.
Throw the tomatoes & spinach in with the bacon just long enough for the spinach to wilt.
It was seriously delicious!!
